Place empty drum
upright on work counter with top lid removed. (Make sure that vacuum is released by
turning or sliding valve cover to open position to remove lid.) |

Place seasoning, water
and meat into the drum. |

Place lid back onto
the drum. (Make sure that the gasket is in place.) |

Attach the vacuum hose
to the nozzle on the lid of the upright drum. (LT-40 & LT-20 slide the hose
coupling back while placing over fitting on the lid. LT-10 slide fitting on lid down
and insert end of pump hose into fitting.) |

With tumbler drum
upright, turn the vacuum pump on and draw the vacuum into the green zone. (Do not tip drum while drawing vacuum as marinade will be drawn into the
pump and void your warranty.) |

After the desired
vacuum has been achieved, close the valve prior to removing the hose. (LT-10 slide
up the fitting on the lid until fully raised. LT-20 & LT-40 close valve by
turning the handle on the fitting to a 45º angle.) |

Place the drum back
onto the tumbler base. (LT-10 place cover from pump under the drum while sliding back into
holder for proper positioning and tighten finger nut.) |

8 |
Turn timer tumbling
time as desired based on product and package. |
| Step 9 |
After tumbling has
ended, remove drum and place upright on counter. Open valve to release vacuum.
Remove lid and place product into desired trays for display or into a container for
storage in cooler. |
